Ingredients:  Pepper, Mustard, Cumin, Smoked Paprika, Chilli, Chipotle, Sweet Paprika, Hot Paprika

Suitable as a dry rub for Beef, Pork, Chicken or Lamb using your regular BBQ/Smoker methods.

Texas Rack - Prime Rib on the Bone

2 Cattleman's style steaks on the bone, 1 Tbsp prepared Mustard sauce (American), 2 Tbsp Texas Rack Rub, 1 Tbsp Brown Sugar or your substitute, 1 tsp Salt (optional)

Mix Mustard, Texas Rub Blend and Sugar together.  Allow to stand for an hour to reach room temperature.  Pre-heat the oven to 200 degrees.  Pre-heat a cast iron or heavy duty oven suitable frying pan and cook for 2 minutes then turn over and cook the other side for 2 minutes.  Place in the oven and continue to cook for about 15 minutes or until a meat thermometer reads 72 degrees.  (adjust to suit how you like it), lift out and rest for 10 minutes.
