Rosemary Lamb Rub
Leg of Lamb boned out, 35g Rosemary Lamb Rub, Olive Oil, Lemon Juice
Use 4 large metal skewers and thread into the Lamb to secure it through each side. Mix the Rosemary Lamb Rub with enough Olive Oil to loosen it so it can be easily smeared over the meat, add a squeeze of Lemon Juice and allow to stand for 15 minutes. Spread the mixture over both sides of the Lamb and place on the BBQ (indirect method). Cook for 20 minutes, turn over and cook for a further 20 minutes. To finish cook on direct heat for 5 minutes on either side.
