Ingredients:  Coriander, Cumin, Pepper, Cardamon, Turmeric, Salt, Fennell, Cloves, Cinnamon, Cayenne, Paprika, Allspice

Derived from the Arabic phrase "Head of the Shop," Ras-el-Hanout is a blend of the finest spices that a merchant has to offer.  Kiwi Spices has carefully selected a harmonious mix of ingredients to craft this unique blend.

Ras-el-Hanout

500g diced Beef, Lamb or Chicken, 2 Tbp Ras-el-Hanout Blend, 2 large Onions halved and sliced fine, 2 tsp crushed Garlic, 2 tsp crushed Ginger, 1/4 cup Mustard Oil or Vegetable Oil, 1/2 cup tinned Italian Tomatoes diced, 2 Tbsp Sugar, 3/4 cup Water, Salt to taste

Put the diced Beef in a dish, add the Ras-el-Hanout Blend, Garlic and Ginger.  Mix well and stand for 3 hours.  Heat the Oil until smoking, scatter in the sugar followed by the Onions and stir fry until dark golden brown.  Add the Meat and continue to stir fry for a further 10 minutes on a lower heat.  Add Water, Tomatoes and Salt.  Lower the heat, cover and simmer until tender.  If it becomes too dry add a little water.  Serve with Rice and a cold Cucumber Raita.
